From inventive techniques like crafting liquor from a dairy side product, or infusing native ingredients, including locally sourced fruits and herbs to adhering to traditional methods such as using a local wheat strain, they run the gamut. Windsor became the birthplace of Canadian whisky production with the establishment of Hiram Walker and Sons Ltd.
